Ingredients:
1 cup blanced almond flour
1 Tblsp. tapioca flour or arrowroot start
2 eggs
3 Tblsp. unsweetened applesauce
1/4 cup raw honey
1 apple, peeled, cored, chopped
3-4 drops Young Living Cinnamon Bark essential oil (purchase here)
Dash organic vanilla extract
Dash ground cinnamon
Dash baking soda
Dash gluten-free baking powder
Directions:
1. Preheat oven to 350 degrees
2. In a bowl, combine flours, baking soda, baking powder, and sea salt
3. Add in eggs and apple sauce and mix well to combine
4. Mix in honey, Cinnamon Bark oil, and vanilla
5. Add in apples and mix to combine
6. Grease muffin tin or line muffin tin with silicone muffin liners (purchase here)
7. Pout batter into muffin tins, about halfway
8. Place a dash of ground cinnamon into each muffin cup and swirl with a toothpick
9. Bake for 12-15 minutes or until a toothpick comes out clean
10. Optional: Make carmelized apples by slicing or spiralizing (purchase spiralizer here) your apples into ribbons
11. In a pan, heat butter and add in apples
12. Let cook until soft (depending on thickness) 5-8 minutes
13. Add in honey and let cook for 5 more minutes until carmelized and soft
14. Let cupcakes cool, top with apples, and serve
